These Citrus Coconut Collagen Balls are a refreshing, tangy, and nutritious snack, perfect for a quick energy boost or a healthy dessert.

Ingredients:

  • 1 cup unsweetened shredded coconut
  • 1/2 cup almond flour
  • 1/4 cup Nutonic Kalla collagen powder
  • 1/4 cup honey or maple syrup (for a vegan option)
  • Zest of 1 orange
  • Zest of 1 lemon
  • 2 tablespoons fresh orange juice
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

Instructions:

  • Mix Dry Ingredients: In a medium bowl, combine the shredded coconut, almond flour, and collagen powder.
  • Add Zest and Juices: Add the zest of one orange and one lemon to the mixture. Then, pour in the fresh orange and lemon juice.
  • Wet Ingredients: In a small bowl, mix together the honey (or maple syrup) and vanilla extract. Add this to the dry ingredients.
  • Combine: Stir everything together until you get a mixture that can be shaped into balls. If the mixture is too dry, you can add a little more juice or honey.
  • Form Balls: Using your hands, form the mixture into small balls, about the size of a walnut.
  • Chill: Place the balls on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to allow them to set.
  • Optional Coating: If desired, roll the balls in additional shredded coconut for an extra layer of flavor and texture.
  • Store: Keep the balls in an airtight container in the refrigerator. They should last for up to a week.
